Pita Pizza

Sometimes you're lazy.  And by you I mean me.

I mean obviously you (as in you) are also fairly lazy a good bit of the time too.  But that's beside the point.

The point is this.

We're lazy.  And we want pizza.  We want pizza with less guilt.

I give you Pita Pizza.  You're welcome.

I made mine with store-bought flatbread pitas, store-bought spaghetti sauce, pre-shredded Italian blend cheese, and you know what?  It was delicious.  Feel free to home-make all that stuff, but also feel free to be lazy with it.  Because you know what?  You're not ordering delivery, so you deserve to cut a few corners.

Pita Pizzas
(makes 6)

6 pitas
1 jar marinara sauce (I use Emeril's)
1 lb hot Italian turkey sausage
1 1/2 cups fresh spinach, chiffonaded
1 cup shredded Italian blend cheese
Cherry tomatoes, if desired
Parmesan cheese, to taste
*Any other toppings you may desire*

Remove sausage from casings.  In a large skillet, brown over medium heat.  Once cooked through, add entire jar of sauce.  Cook on low about 5 minutes until hot.

Preheat the oven to 350.

Spread pitas out on 2 ungreased pans.  Spoon sausage in sauce over each pita, divided equally among them.  Layer spinach next, followed by shredded cheese.  Sprinkle Parmesan as desired.  Slice cherry tomatoes and decorate the top, mostly to make it pretty.  

Bake on center rack 13 minutes.

  2. Haha... chiffonaded is a fancy word for chopped up....usually into short strips. At least, that's what I meant by that. :)
